The story

Key lime pie is the signature dessert of Key West, the sun-washed island at the end of the Florida Keys. It takes its name from Key limes, small, round, intensely aromatic limes that once grew all over the islands. Florida made Key lime pie its official state pie in 2006.

The pie's origins are hazy. A popular story credits a cook known only as Aunt Sally, who worked for the wealthy Key West businessman William Curry in the late 1800s, though there is little evidence to confirm it. What historians do agree on is why the pie works: before refrigeration and reliable fresh milk reached the Keys, sweetened condensed milk, introduced in the mid-1800s, was a pantry staple. Mixed with acidic lime juice and egg yolks, it thickens naturally into a creamy custard.

Today most recipes, ours included, bake the pie briefly for food safety and a cleaner set. Key lime purists argue endlessly about meringue versus whipped cream and pastry versus graham crust, but one rule is firm: a true Key lime pie is pale yellow, never green.

Tips for success

  • Bottled Key lime juice works well, and Persian limes will also do, though the flavor is slightly less floral.
  • Pull the pie while the center still jiggles; it firms up as it chills.
  • Wipe your knife between slices for clean edges.
  • Key lime pie keeps for 3 days in the fridge and can be frozen, without the whipped cream, for up to a month.

Instructions

Bake the crust

  1. Heat your oven to 350°F (175°C).
  2. Stir together the graham cracker crumbs, sugar, salt and melted butter until the mixture resembles wet sand. Press it firmly and evenly into the bottom and up the sides of a 9-inch (23 cm) pie plate.
  3. Bake for 10 minutes, until fragrant and lightly golden, then cool on a rack for at least 15 minutes.

Make the filling

  1. Whisk the egg yolks and lime zest together for about 1 minute, until slightly pale. Whisk in the condensed milk, then the lime juice, until smooth and slightly thickened.
  2. Pour the filling into the cooled crust and bake for 15 minutes, until the center is just set but still trembles slightly.
  3. Cool the pie on a rack for 30 minutes, then refrigerate for at least 3 hours, or overnight, until cold and firm.

Top and serve

  1. Whip the cream with the powdered sugar to soft peaks. Spread or pipe it over the pie, garnish with lime slices and serve cold.

Questions, answered

Can I use regular limes for Key lime pie?

Yes. Regular Persian limes work and give a slightly sharper, less aromatic flavor, but the pie will still be delicious.

Why isn't Key lime pie green?

Key lime juice is pale yellow, and the yolks and condensed milk keep the filling creamy yellow. Green pies get their color from food coloring.

Does Key lime pie need to be baked?

Traditional recipes set without baking, but a brief bake cooks the egg yolks for safety and gives a firmer texture.
